{Recipe} Avocado Variety Toasts / Matcha Granola / BoxGreen June Box



Always feeling happy when I receive snacks from BoxGreen! Love receiving parcels :)




 Great news this month as BoxGreen has recently launched a new initiative! Customers can now indicate their preferences and customize their very own box of healthy snacks :) Yay!

Made some Avocado Variety toasts with these snacks!


Smashed avocado with Peanut Pretzel Muddy Bites


Laughing Cow Cheese spread with avocado chunks and MacRitchie Midnight snacks :-)


Avocado Variety Toasts

Ingredients:
5-6 slices of wholemeal bread
3 ripe avocados - smashed/diced/sliced
1/2 cup cherry tomatoes
Laughing Cow Cheese wedges
2 eggs 
Snacks/Nuts of your choice


Method:

1. Scoop out soft and ripe 3 avocados from their skin. 
1 for smashing, 1 chopped into chunks and 1 sliced.

2. Slice cherry tomatoes into halves

3. Heat a greased non-stick pan on medium-high and crack an egg in. Fried till crisp.

4. Crack the 2nd egg in and stir quickly with a wooden spatula to scramble. 

6. Decorate as you wish! Season with some salt and pepper too :)



 


 

Baked Matcha Granola! :)


 A different recipe used this time as I added matcha milk jam (from Osulloc!) which is basically matcha milk chocolate *_*


Bigger oat clusters due to the sticky nature of chocolate :)


 With BoxGreen's Coco Berry Smoothie - Coconut flakes, diced pineapples and cranberries :)
Matcha goes incredibly well with coconut and cranberries :)

Love how the milk is tainted green after a while and tastes like matcha latte *_*



Matcha Granola

Ingredients:

3 Tbsp powdered matcha, plus more for finishing
3 Tbsp matcha milk chocolate
5 Tbsp maple syrup/honey

2 cups rolled oats

1 cup mixed nuts and seeds (e.g. almonds, cashews, hazelnuts, pine nuts, sunflower seeds, pumpkin seeds, sesame seeds, ...)
 
1 cup mixed dried fruits (raisins, cranberries, sultanas, mulberries, figs, goji....)
Chocolate chips (optional)
1/4 cup of BoxGreen's Coco Berry Smoothie


Method:

1. Preheat the oven to 170C. Line a baking sheet with parchment paper.

2. Mix the matcha milk chocolate, maple syrup/honey and matcha powder till combined.
 
3. Toss oats and chopped nuts/seeds together. Add in the oil mixture and mix thoroughly, ensuring everything is well coated.
4. Spread the mixture evenly onto the lined baking sheet, and bake for about 20 minutes to your desired brown-ness, stirring once or twice along the way.
 
5. Remove from oven. Let cool completely before mixing in the dried fruits and chocolate chip (if using).
