Toasted marshmallows always remind me of the good old school days when
we used to have chalets and one of the common activities then was the
BBQ party at night! :)
Most of the time it would be the boys setting up the fire whereas the girls will stay far away from the pit and only gather around when it's time for food/marshmallows hahahaha
Had a craving for brownies and decided to give it a buttery crust + gooey marshmellow topping + nutella center because... why not? ;)
It was certainly more tedious than the usual brownie recipe because of the extra time needed to make the crust but trust me, it is worth it.
Nutella-stuffed Smores Brownies
adapted lightly from Hershey's Kitchen
Ingredients:
3 cups graham cracker crumbs
¼ cup granulated sugar
¼ teaspoon salt
¾ cup unsalted butter, melted
200g All Purpose Flour
80g Cocoa Powder
1/2 tsp Baking Soda
150g Unsalted Butter, melted
120ml Boiling Water
70g Semi-Sweet Dark Chocolate, melted
2 Large Eggs
280g Castor Sugar
1tsp Vanilla Extract
Pinch of Salt
120g Semi-Sweet Dark Chocolate Chips

Method:
1. Preheat oven to 180 degrees C. Butter a 9x13-inch baking pan. Line the pan with grease-proof paper, leaving an overhang. Lightly grease with butter/cooking spray and set aside.
2. Combine the graham cracker crumbs, sugar and salt in a large bowl. Add the melted butter and stir until the entire mixture is moist. Transfer the graham cracker mixture into the prepared baking pan and press into an even layer. Bake for about 15 minutes, until golden brown.
3. In a large bowl, combine cocoa powder and baking soda. Stir in boiling water to form a thick paste.
4. Stir in sugar, eggs, melted chocolate and melted butter and mix well until smooth.
5. Add flour, vanilla extract and salt and combine well. Fold in chocolate chips.
6. Pour half the mixture into the prepared pan. Dollop spoonfuls of Nutella on top of the batter and spread evenly before pouring the remaining batter into the pan.
7. Bake for about 30-35 mins or until brownies begin to pull away from sides of pan. Toothpick inserted will come out with a few moist crumbs.
8. Remove brownies from oven and switch the oven to broil.
9. Arrange the marshmallows onto the brownies in an even layer. Pop the pan back in the oven for a few minutes and keep a close eye as they can get burnt very quickly.
10. Let cool completely before cutting into squares. Store at room temperature in an airtight container.
