A
one-bowl recipe that's quick to put together and tastes good! Not to
mention it's slightly healthier than usual recipes as it is flourless,
butter-free and raw cacao powder (rich in antioxidants!) is incorporated
;)
I
chose to frost the brownies with some creamy bittersweet matcha
mascarpone for that flavour and colour contrast ;) You just need 3
simple ingredients!
INGREDIENTS
Almond Butter Brownies:
1/2 cup creamy almond butter from The Good Nut Co
1/2 cup brown sugar (or coconut sugar)
3 eggs
1 tsp vanilla extract
1/2 cup raw cacao powder (or cocoa powder)
1/2 teaspoon baking soda
1/8 teaspoon salt
1/2 cup chocolate chips
Almond Butter Brownies:
1/2 cup creamy almond butter from The Good Nut Co
1/2 cup brown sugar (or coconut sugar)
3 eggs
1 tsp vanilla extract
1/2 cup raw cacao powder (or cocoa powder)
1/2 teaspoon baking soda
1/8 teaspoon salt
1/2 cup chocolate chips
Matcha Mascarpone Frosting:
250g mascarpone cheese (softened)
1/4 cup icing sugar or caster sugar
1/2 tbsp matcha powder dissolved in hot water to form a thick viscous liquid
Milk
METHOD
Brownies:
1. Preheat oven to 180 degrees celsius. Grease a rectangular baking sheet and line with baking paper.
2. Add all ingredients (except chocolate chips) into a large bowl and beat on medium speed until smooth and well-incorporated.
3. Fold in chocolate chips.
4. Spread batter onto the greased pan and sprinkle with additional chocolate chips if desired.
5.
Bake for 15-20 minutes or until a toothpick comes out with moist
crumbs. The center will appear underdone but it will continue to bake
while cooling!
6. Cool brownies completely on a cooling rack
Matcha Mascarpone:
1. Mix all ingredients together and add milk to desired consistency.
2. Spread on the cooled brownies.
3. Chill in fridge for 20mins so that it's easier to cut before serving :)

The Good Nut Co's
Naked Almond Butter is made from 100% blanched almonds and... nothing
else! Pure and natural, this almond butter is preservative-free, refined
sugar free, hydrogenated oil-free, affordable and packed with nutrients
from almonds :)
It is perfect for this recipe because of it's mild, mellow flavour, but yet incredibly creamy.
Another cool thing about their Naked
Almond Butter, is that it is actually a 2-in-1 almond butter and almond
milk concentrate paste! Simply add hot water to a few tablespoons of
almond butter, strain it with their Ultimate Nut Milk Bag and there you
have it, your very own fresh, homemade almond milk :)
I
am personally not a fan of almond milk, but I've made it for family and
friends who loved the natural sweetness and taste of this fresh,
homemade milk. It is definitely a great alternative to dairy milk for
vegans or the lactose-intolerant.
Why
make your own almond milk then? Quoting from The Good Nut Co, "Most
commercial varieties of almond milk are made up of less than 10%
almonds. Research has shown that some brands contain as low as 2%
almonds! The rest of the beverage is made of filtered water, and packed
with sugars, preservatives and stabilizers that are harmful to our
bodies."
Each jar of The Naked Almond Butter can make up to 4 litres of almond milk (using 1 tbsp of almond butter to 1 cup of water), super affordable and value for money!
P.S. Almonds are high in Vitamin E, protein, fibre and
anti-oxidants! It also has a low glycemic index which keeps you satiated
and act as a great snack.
If you are a nuts-lover like me, you will be stoked to know that The Good Nut Co also sells Peanut Butter with crunchy almond chunks! Honestly one of my favorites currently ;)
