It's been ages since I last baked granola and finally did so last friday, simply because I miss having it with my yogurt :P Plus I felt like baking something small and easy, so granola seemed like the perfect idea!
Previously i tried baking the normal honey-toasted granola, peanut butter granola, chocolate granola and this time, matcha granola! :)
Yummy, crunchy, addictive, and healthy! Nothing more I can ask for :)
*Actually I didn't use a recipe, just threw in whatever felt right and eyeball the proportion hahaha here's a rough one! :)
Matcha Granola
Ingredients:
3 Tbsp powdered matcha, plus more for finishing
3 Tbsp vegetable oil
5 Tbsp maple syrup/honey

1 Tbsp vanilla paste (I added this but couldn't taste it at all, would add more next time!)
2 cups rolled oats
1 cup mixed nuts and seeds (e.g. almonds, cashews, hazelnuts, pine nuts, sunflower seeds, pumpkin seeds, sesame seeds, ...)
1 cup mixed dried fruits (raisins, cranberries, sultanas, mulberries, figs, goji....)

1/2 cup matcha/white/dark chocolate, chopped (optional!)
Method:
Preheat the oven to 170C. Line a baking sheet with parchment paper.
Mix the oil, maple syrup/honey and matcha powder till combined.
Toss oats and chopped nuts/seeds together. Add in the oil mixture and mix thoroughly, ensuring everything is well coated.
Spread the mixture evenly onto the lined baking sheet, and bake for about 20 minutes to your desired brown-ness, stirring once or twice along the
way.
Remove from oven. Mix in the dried fruits and a sprinkle of matcha powder. I added about 2 tbsp of chia seeds and flax seeds too!

Let cool completely before adding the chopped chocolate.
Serve with yogurt, milk, or just eat it as a snack :)
