Fruit Galette - topped with blueberries, cinnamon apples, bananas, strawberries and hidden layer of caramel cream cheese.
Really easy to make due to the frozen puff pastry used! :P

Fruit Galette
Ingredients:
1 block of frozen puff pastry
1 block of frozen puff pastry
For each bowl of fruit:
Chopped fruits (I used sliced apples, bananas, blueberries, strawberries) in 4 separate bowls
2 Tbsp sugar, depending on sweetness of fruit
2 Tbsp all-purpose flour
2 Tbsp sugar, depending on sweetness of fruit
2 Tbsp all-purpose flour
Pinch of salt
180g Cream cheese
5 Tbsp Caramel (recipe here)
Egg yolk - for brushing
Method:
Take out the frozen puff pastry, let it thaw and soften in room temperature.
Preheat oven at 200C. Line a sheet pan with greaseproof paper.
Toss each bowl of prepared fruit with sugar, flour and salt.
On a lightly floured work surface, roll out the dough and cut out 2 10cm long strips.
Roll the remaining dough into a 12-inch round, about 1/8 inch thick.
Mix caramel with cream cheese until smooth. Spread it on top of the round dough.
Pile each fruit evenly on each quarter of the round, leaving a 2-inch border uncovered.
Fold the dough up and over the filling. Place the 2 strips of dough horizontally or vertically across the fruits. Press down with cold water to seal the edges.
Brush the pastry with a beaten egg yolk.
Bake the galette for 25 minutes or until pastry turns golden brown. Let cool for at least 20 minutes before slicing.
Serve it like this or with ice cream! :)

What a cool idea! If you can't chose between fruits, why not have all of them? :)
