Been sometime since I last had pancakes :)
Bro bought a tub of Raspberry Coconut yogurt and hence i was inspired to make these!
Using both coconut flour and coconut oil, the fragrance when grilling these pancakes was AMAZING
The coconut flour also made the pancakes extra fluffy!
Topped with raspberries and matcha kit-kat :)
And more yogurt
Scattered some nuts and dried fruits
The sweet, tangy yogurt complemented the bitterness of the matcha :)

Matcha Raspberry Coconut Pancakes
Ingredients:
1 egg
1/3 cup yogurt
1/3 cup yogurt
3 tablespoons sugar
2 tablespoons coconut oil
1 teaspoon vanilla extract
1/2 cup coconut flour
1.5 tablespoon matcha powder
1 1/2 teaspoons baking powder
1/4 tsp salt
2 tablespoons coconut oil
1 teaspoon vanilla extract
1/2 cup coconut flour
1.5 tablespoon matcha powder
1 1/2 teaspoons baking powder
1/4 tsp salt
Method:
- Whisk egg, yogurt, coconut oil, sugar, and vanilla extract together.
- Sift in flour, matcha powder, baking powder, and salt and mix until the batter comes together.
- The batter should be lumpy, do not overmix.
- Brush a non-stick pan with butter and heat over medium-low heat.
- Drop circles of pancake batter onto the pan, using a 1/4 measuring cup.
- Wait until bubbles appear and pop on the surface, then flip the pancakes and cook for another minute until evenly browned.

I love adding matcha to baked goods! I realize pancakes aren't baked goods necessarily but that's ok because these look delicious!

DeleteUnfortunately even though I followed the instructions exactly, the batter was super dry. I even added some soy milk but nothing would make it runny. :(
ReplyDeleteOh dear i'm so sorry to hear that! Hmm that is strange.. perhaps you can cut down the amount of flour and increase the yogurt proportion? :)
