{Recipe} BoxGreen February Box // Avocado Pistachio Quinoa Pasta

Healthy snacks from the lovely Box Green (@boxgreenco) :) Check out my first post on them here.
February is a month of feasting! From Valentine's Day to Chinese New Year, I had a ball of time stuffing myself with delicious food :) Thanks to Box Green, I get to enjoy 4 different healthy and interesting snacks that provides an alternative to the otherwise unhealthy CNY goodies i.e. pineapple tarts and bak kwa :P Still, everything in moderation!

My favourite is the dehydrated pineapples! They were so crunchy and delicious *_*

I also made Avocado Pistachio Quinoa Pasta using BoxGreen's lightly toasted pistachio nuts that were fresh and huge :)

 Avocado Pistachio Quinoa Pasta 


1. Cook pasta according to package directions, I used quinoa pasta :) Drain and let cool.

2. Puree 1/2 avocado, a handful of pistachios, 2 tsp olive oil, 3 tbsp cottage cheese (for extra protein and creaminess), salt and pepper in a blender/food processor.

 3. Mix cooked pasta in the avocado pistachio puree. Feel free to add in chopped cherry tomatoes too.

 Done! Easy, simple and delicious wholesome meal :)

 A simple yogurt fruit bowl with their Mandarin Orange and Dark Choc Granola :) Definitely a refreshing snack or breakfast!
