Vanilla Yogurt Cheesecake with a Matcha Brownie Base and Azuki Beans!
Topped with Rafaello balls :) Torched lightly but it started melting so I had to stop hahahaha
Matcha brownie was over-baked at the sides but oh well, 2 different textures? Hehe :)
Matcha Green Tea Brownie

Ingredients:
113g unsalted butter
1 cup white chocolate chips
2 eggs
1 cup flour
¼ cup matcha green tea powder

Method:
1. Preheat oven to 170C. Grease and line a 8x8 baking pan.
2. In a large microwave safe bowl, combine the butter and white chocolate chips until melted and smooth. Let cool.
3. Add eggs and matcha powder to the bowl and stir on low until combined.
4. Add flour and keep mixing until just incorporated.
5. Pour brownie batter into prepared pan and spread it into an even layer.
6. Bake until edges are lightly browned, about 20 to 25 minutes.
7. Cool pan on a wire rack.
Vanilla Yogurt Cheesecake Filling
Ingredients:
250g cream cheese
250g plain yoghurt or vanilla yogurt
60g castor sugar
2 tbsp gelatin
100ml water
2 tbsp gelatin
100ml water
Method:
1. Melt gelatin in water till dissolved. Remove from heat and let cool till room temperature.
2. Add caster sugar to softened cream cheese and cream till well-combined.
3. Add the cooled gelatin solution.
4. Add in yogurt and incorporate well.
Assembly
1. Spread azuki beans onto the cooled matcha brownie layer.
2. Pour cheesecake filling over and let it set in the refrigerator till firm.
